I Just Need Space • Kath Eats

Here’s to life lately!

Mazen gets wind!

While of course, with spring break underway, I need a place! But what I really mean is that there’s a lot of space-themed stuff going on right now!

  1. Project Hail Mary – IT WAS LOVELY!! Good. I liked that it wasn’t action packed (I don’t like action movies) but it was good for all ages.
  2. The atmosphere – I’m still learning a little, but it’s been great. And I really enjoyed learning more about astronaut training as I watched Hail Mary.
  3. Artemis II – Because of the above two things, I became very interested in Artemis II’s mission!

I can tell you this: I do NOT want to go to space! Ironically, I’m getting claustrophobic thinking about it! I think I actually have a fear of heights because it was a Hail Mary when she looked over the edge of the ship – OMG – that was scary!!

I will be more open spaces Please.

From space to the horror genre, Birch has entered the Goosebumps books! I read them all when I was younger (and Fear Street, too) so I’m excited about this new interest.

He doesn’t blow their breath – I think he is more focused on his mind than sitting down to read. We found a few at the library!

Bloody Summer Camp 2

In the horror genre for adults, I got to go to the first game of Bloody Summer Camp 2! This is a film that my friend Sean and Jonathon worked on (Sean as actor, Jonathon as lead singer). Since we have that connection, Mazen and Birch serve as campers in the opening! It was great to see everyone on the big screen. The movie was great (if you like slasher movies with lots of blood)!

After the screening, there was a Q+A with the cast and crew. They brought it to Charlottesville in May. if anyone wants to go – email me! It will be broadcast eventually.

Scary again? The area under my washer/dryer.

But all for a good reason – I got a new one!!! SO HAPPY about this because the old one was the smallest washer ever, and I had to wash it all the time because it would fit small loads. The new one is twice as big, and I’m excited!!

Easter fun

We had a low, but fun weekend. With the Easter miracle, the boys played well together for the first time in a while!

Notice B’s basket was full of things when he got up, but it was empty for the picture! Her hair is wet because she had to try her bath bombs right away!

It rained early in the morning, so we postponed our annual egg hunt until the afternoon when the sun came out and it was beautiful! I brought a Cinnamon Chip bunny from Great Harvest.

We hid hundreds of eggs and the kids found them all in 10 minutes!

Getting out

Girls night at Lost Saint

This burrata and butternut bread was amazing!!

Happy Hour Thursday is going strong!

Friends go to Tavola

I had to get the burrata there too. It’s obvious.

Kath Eats Real Food

And here is the food that has been collected lately!

Breakfast

Lots of grapes, homemade granola, Irish soda bread, and berries.

Lunch

Salmon salad is my new favorite. This smoked salmon from Fishwife turns into the best salad with three ingredients: yogurt, mayo, and orange marmalade. I like it on crackers or with carrot chips and Sun Chips.

Mazen and I got all of his favorite sandwich ingredients at Wegman’s over spring break, and we had pulled pork sourdough sandwiches for lunch! (This kid has bougie taste.)

I would eat a salad at Chopt every day for lunch if I could afford it <3

Dinners

A few highlights of the dinner:

I made this orzo salad as a homemade dinner. Great with roasted chicken!

Here’s Fit Foodie Freezer Meal #2: Chicken with Gnocchi. I think my crockpot must have been too hot because my gnocchi melted, but other than that it was great!

Salmon Burgers

I got these at Wegman’s – they were great! LOVE these Recess mocktails! The Island Spritz is the best.

Last but not least: classic spaghetti and meat sauce!

I hope you had a great weekend!
